Make Lemon Sour Cream Cake

It's time to share our favourite family cake recipe with you!

Winter is the time of year to fill your kids up with lovely warm, citrus inspired treats... and BOY do I have the cake for you.

It is a brief, simple recipe that my friend dictated to me from her family, many moons ago. It cooks low and slow and it is  divine.

Cook the cake, in your cake pjs + have a wonderful, winter afternoon!

Lemon Sour Cream Cake

I use a bunt cake tin and can fill a few mini loaves with the extra batter

(it's an old recipe, passed down... not an exact science!)

 

Ingredients
250g soft butter
2 cups brown sugar
4 eggs lightly beaten
rind of one lemon
2 cups of flour
2 teaspoons of baking powder
1 cup of sour cream
Method
cream butter + sugar with lemon rind
fold in flour and baking powder - alternatively with sour cream
gently pour into a tin
bake 160 degrees for 60 minutes
Glaze
juice one lemon + 1/4 cup of caster sugar
leave cake in tin for a few minutes, pour over glaze when cake is still warm...try not to eat the entire cake in one afternoon!
